I've camped at many of the NC State parks, I'll tell you my favorites: http://ils.unc.edu/parkproject/visit/ncmap.html

NC Mountains: Mount Mitchell (gorgeous but only a very few campsites available plus hiking) or New River (right on the river, of course)
NC North Central: Hanging Rock (camping, lake)
NC South Central: Raven Rock (camping, hiking, on a river)
NC Coast: Carolina Beach (camping, on the intracoastal)

You can also camp in the Mountains in the Great Smoky Mtns National Park, the Blue Ridge Parkway, or at the coast at Hattaras National Seashore: http://www.nps.gov/state/nc/

Here's general information about NC (look at the "Where to Stay" link and beside "Find" select "Camping"): http://www.visitnc.com/

Have fun!
References :
No, contacting one's state department of natural resources is not the easiest or more accurate way of finding about about camping spots in your area and I don't know why Dave Ghrol Wannabe keeps suggesting that to everyone. State DNR's focus mainly on conservation areas, including dealing with endangered species and stocking fish in lakes.

Campgrounds are run by parks or private companies, and in order to find a campground you have to first pick an area or park you wish to go to, then each park would have a website online, and a list of campgrounds, and you'll need to check the map, price, list of amenities, etc. to determine which one seems like it might be good. Or you could go there and drive around to a couple to see which one you like. Or maybe there's a slight chance someone has written about the place online and you'll find a review or even a photograph.

But really a campground is mostly just a campground. It's dusty, crowded, and likely near a lake or stream. You shouldn't worry too much about whether the campground is "nice" but rather whether the park is nice, and that should be enough. Anywhere you go in a nice park is going to be better than staying home. And it's really up to each person to explore and find something new and appreciate what is there. There's no point in asking, "where to camp in Yosemite National Park?" Just being there is good enough.

This page should get you started on NC: http://www.cs.unca.edu/nfsnc/recreation/recreate.htm
References :
I sugest you contact your Department of Natural Resources because they are the ones that are incharge of all the campsites and are the ones that make all the camping rules therefore, they would be able to assist you on finding your camping spot.
References :
There are so many great places to camp in NC. One would be best served by purchasing a book or checking one out at the libray, as to the many camping areas in NC.
I love Davidson River in Brevard, Pisgah campground on top of the Blue Ridge Pky, it has a lot of privacy, no hot water but they do have running water. Graveyard Flats or Fields and so many more! Have fun!
